INGREDIENTS :

DRIED CHILLI 20 %

GARLIC 20 %

ONION 19 %

LEMONGRASS 9 %

GALANGAL 7 %

KAFFIR LIME RIND 6 %

SHRIMP PASTE 6 %

COOKING DIRECTIONS: RED CURRY (SERVES 2)

1. Heat 1 tbsp vegetable oil in a saucepan over a medium heat. AdD 50 g Red Curry Paste and stir-fry until an anomatic. Gradually add 1 cup of coconut milk a little at a time and stir until it dissolves.

2. Add 200 g chicken or meat of your choice and stir until well cooked. The add 1/2 cup of water and bring to the boil. Season with 1 tbsp fish sauce and 1 tbsp palm sugar.

3. Add 1/2 cup bite-sized round eggplant and 1/4 cup pea eggplants, Stir well until cooked through. Then add 1 tbsp shredded kaffir lime leaves, 1/2 cup sweet besil leaves and 2 tbsp sliced red chillies. Turn off the heat. Serve hot with steamed rice.
