INGREDIENTS :

COOKING DIRECTIONS: GREEN CURRY (SERVES 2)
1. Heat 1 tbsp vegetable oil in a saucepan over a medium heat. AdD 50 g Green Curry Paste and stir-fry until fragrant. Gradually add 1 cup of coconut milk a little at a time and stir until it dissolves.
2. Add 200 g chicken or meat of your choice and stir until well cooked. Then add 1/2 cup of water and bring to the boil. Season with 1 tbsp palm sugar and 1 tbsp fish sauce.
3. Add 1/2 cup bite-sized round eggplant and 1/4 cup pea eggplants, stir well until cooked through. Then add 1 tbsp kaffir lime leaves, 1/2 cup sweet besil leaves and 2 tbsp sliced red chillies. Turn off the heat. Serve the curry with steamed rice, spaghetti, roti or fermented rice flour noodles.
